Coffee Flavored Fruit Dip
Ingredients:
- 8 oz package of cream cheese, softened
- 8 oz container of sour cream
- 1/2 cup brown sugar
- 1/3 cup coffee liquor
- 8 oz frozen whipped cream topping
Directions:
1. In a medium bowl, combine cream cheese, sour cream, brown sugar, and coffee liquor. Blend until smooth.
2. Fold in whipped topping until just mixed.
3. Chill in refrigerator for at least one hour.
4. Serve with your favorite fruit!
Coffee BBQ Sauce
Ingredients:
- 1/2 cup brewed espresso
- 1 cup ketchup
- 1/2 cup cider vinegar
- 1/2 cup firmly packed light brown sugar
- 1 onion, peeled and finely chopped
- 2 cloves garlic, peeled and crushed
- 3 fresh hot chili peppers, such as jalapeno, or hotter if desired, seeded
- 2 tbs hot dry mustard mixed with 1 tablespoon warm water
- 2 tbs Worcestershire sauce
- 2 tbs ground cumin
- 2 tbs chili powder
Directions:
1. Combine all ingredients in a small pot.
2. Stir well and bring to a simmer over medium-high heat.
3. Lower heat and allow to simmer for 20 minutes.
4. Remove from heat and let mixture cool. The puree in a blender.
5. Use on your favorite meat!
Soft Molasses Cookies
Ingredients:
- 1 cup soft butter or margarine
- 1/2 tsp salt
- 3 tsps baking soda
- 2 tsp ground ginger
- 2 tsp ground cinnamon
- 1 tsp powdered mustard
- 1 tsp instant coffee
- 1 tsp ground cloves
- 1 cup sugar
- 1 cup unsulphured molasses
- 1 large egg
- 4-3/4 cups sifted all-purpose flour
- 3/4 cup water or milk
- Walnut halves or seeded raisins
Directions:
1. Combine butter, salt, baking soda, ginger, cinnamon, mustard, coffee, and cloves in large bowl. Blend in sugar and molasses. Beat in an egg thoroughly, then add flour alternatively with water/milk. Beat until all is well combined.
2. Preheat oven to 375
3. Drop heaping tablespoonfulls of dough onto ungreased pan, 2 inches apart. If desired, press a walnut or raisin in the middle of each one.
4. Bake for 15 minutes. Remove to cool on wire rack.
Coffee Tiramisu
Ingredients:
- 2 cups boiling water
- 3 tbs instant espresso
- 4 large egg yolks
- 1/2 cup plus 1 tbs sugar, divided
- 1/3 cup dry Marsala
- 3 tbs coffee liquor
- 1 pound Marscapone
- 1 cup heavy cream
- 36 Lady fingers
- Unsweetened Cocoa Powder for dusting
Directions:
1. Stir water, espresso, 1 tbs sugar, and coffee liquor together in small bowl until dissolved.
2. Beat your egg yolks, Marsala and 1/2 cup sugar together in a metal bowl and set over a saucepan with simmering water. Beat the mixture 5-8 minutes until has tripled in volume. Remove from hear and add marscapone until combined.
3. Beat cream in a large bowl until peaks form, then fold marscapone mixture in thoroughly.
4. Dip both sides of half the 36 lady fingers into coffee mixture and line a 9 x 13 baking pan with them in 3 rows. Spread half the marscapone mixture over them. Then repeat dipping the remaining lady fingers into the coffee mixture and layering them over the first layer. Cover with remaining marscapone mixture.
5. Dust with cocoa powder and chill for 6 hours, then let stand at room temperature for 30 minutes.
6. Serve and enjoy!
Cappuccino Muffins
Ingredients:
- 2 cups all-purpose flour
- 1/2 cup sugar
- 2-1/2 tsp baking powder
- 2 tsp instant espresso coffee powder (or instant coffee)
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1 cup whole milk
- 1/2 cup butter, melted and cooled
- 1 egg, slightly beaten
- 1 tsp vanilla extract
- 3/4 cup semi-sweet chocolate mini-chips
Directions:
1. Preheat oven to 375 and line 12 muffin tins with paper
2. Whisk flour, sugar, baking powder, espresso, salt, cinnamon, and nutmeg together in large bowl.
3. In a separate medium bowl, combine milk, butter egg, and vanilla well. Add to flour mixture and stir until just combined. Then fold in chocolate chips.
4. Fill muffin tins 3/4 full and bake for 20 minutes.
5. Enjoy! Great for grab-n-go breakfasts!
